I love orange cranberry muffins and I wanted to bring those
flavors into a soft and chewy cookie.
After a few trials and errors this recipe turned out and my family and
friends loved them. I hope you do too.
Soft and Chewy Orange
Cranberry Cookies
Zest of 2 oranges
1 cup sugar
2 cups packed brown sugar
1 ½ cups butter (3 sticks) unsalted and softened
1 ½ Tbsp orange juice
3 large eggs
2 ¾ cups flour
1 ½ tsp baking soda
½ tsp salt
2 ½ cups oats
10 oz of Dried Cranberries
1 cup sugar
2 cups packed brown sugar
1 ½ cups butter (3 sticks) unsalted and softened
1 ½ Tbsp orange juice
3 large eggs
2 ¾ cups flour
1 ½ tsp baking soda
½ tsp salt
2 ½ cups oats
10 oz of Dried Cranberries
Preheat oven to 350.
Mix zest and sugars together on med speed. Then add butter and mix until light and
fluffy. Add the orange juice and eggs and mix until
combined. In another bowl mix flour, oats,
baking soda, and salt together with wire whisk.
Then gradually add to wet ingredients and mix just until combined. Add cranberries. Bake
cookies on parchment paper leaving at least 2 inches between cookies. Bake for about 10 minutes or until slightly
golden brown. Let cool and ready to eat…ENJOY!
