Recipe: Apricot Marinated Pork Chops



¼ cup canola oil plus 1 tbsp
2 tbsp brown sugar
2 tbsp balsamic vinegar
1 tbsp minced ginger
2 tbsp Sriracha 
2 tbsp toasted pumpkin seed oil (or toasted sesame oil) 
3 cloves garlic minced
2 tbsp soy sauce (low sodium)
2 tbsp apricot preserves
8 – 4oz. thin pork chops, bone-in (about ¼ inch thick)
3 tbsp chopped fresh flat leaf parsley (you also could use cilantro)
2 to 4 green onions, sliced  (depends on how much you like)

Preheat the oven to 375 degrees F.
Place 1/4 cup canola oil, sugar, vinegar, ginger, sriracha, soy sauce, pumpkin oil, garlic and apricot preserves in a food processor and process for 15 seconds. Put the pork chops in a heavy-duty resalable plastic bag. Add half of the marinade and reserve the other half until serving. Squeeze out the air, seal and move the chops around in the bag to coat evenly. Marinate in the refrigerator at least 30 minutes, and up to 8 hours.
  
Remove the chops from the bag. Place the reserved marinade in a small saucepot. Bring to a boil to reduce and thicken the sauce a bit, about 2 minutes.
Heat large stainless saute pan over medium-high heat and add the remaining 1 tbsp oil. Brown the chops in the hot pan, 1 to 2 minutes per side. Place the saute pan in the oven and cook until done (155 degrees F internal temperature). Serve with a spoonful of the glaze, with parsley and sliced green onions sprinkled on top.

Recipe: Soft and Chewy Orange Cranberry Cookies


I love orange cranberry muffins and I wanted to bring those flavors into a soft and chewy cookie.  After a few trials and errors this recipe turned out and my family and friends loved them.  I hope you do too.

Soft and Chewy Orange Cranberry Cookies

Zest of 2 oranges
1 cup sugar
2 cups packed brown sugar
1 ½ cups butter (3 sticks) unsalted and softened
1 ½ Tbsp orange juice
3 large eggs
2 ¾ cups flour
1 ½ tsp baking soda
½ tsp salt
2 ½ cups oats
10 oz of Dried Cranberries

Preheat oven to 350.  Mix zest and sugars together on med speed.  Then add butter and mix until light and fluffy.   Add the orange juice and eggs and mix until combined.  In another bowl mix flour, oats, baking soda, and salt together with wire whisk.  Then gradually add to wet ingredients and mix just until combined.  Add cranberries.   Bake cookies on parchment paper leaving at least 2 inches between cookies.  Bake for about 10 minutes or until slightly golden brown.  Let cool and ready to eat…ENJOY!

Recipe: Barbeque Boneless Pork Ribs

Barbeque Boneless Pork Ribs



Ingredients

1 tsp canola oil

3 cloves garlic, minced

1/2 onion, diced (large)

1 1/4 cup ketchup

2/3 cup molasses

1/2 cup brown sugar

4 tbsp minced chipotle peppers in adobo sauce

4 tbsp distilled vinegar

3 tbsp Worcestershire sauce

Dash salt
4 lbs. Boneless Pork Ribs

Directions

Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them (garlic may become bitter). Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar, Worcestershire sauce and salt and stir. Allow to simmer for 30 to 40 minutes. Taste after simmering and add whatever ingredient it needs (more spice, more sugar, etc.  Make it your own).

Season ribs with salt and pepper and grill.  15 minutes before you pull ribs off grill brush all sides with sauce.  Add a salad or your favorite side dishes.
